Sunday Morning Pan Bread

1 cup whole wheat flour
2 cups unbleached flour
½ tablespoon salt
1 tablespoon sugar
1 teaspoon yeast
2 tablespoon coconut oil and an additional ½ tablespoon for oiling pan
½ cup milk
½ cup warm water

Process

In a large bowl mix together all the dry ingredients. Add oil, milk and water to the dry ingredients and mix to from sticky ball. Add a tablespoon or two more water if the dough is too stiff or a small amount of flour if too sticky and hard to handle. Turn the dough onto a clean surface and knead until smooth. Roll the dough with a rolling pin into a 9 inch square. Starting at the far end of the dough, roll into a log and place into an oiled bread pan. Let rise for about 1 hour. Then wrap the pan in a kitchen towel and refrigerate overnight. Next morning, remove the dough and let sit for 45-60 minutes.

Heat the over to 425 degrees and bake the bread in the center of the oven for 30 minutes. Bread should be golden brown. Let sit for about 5-10 minutes before slicing.

*For a crispy crust place a small oven proof pot of boiling water inside the oven.
