Ripe plantains
Process:
Select medium ripe plantains. They can be grilled directly or
placed around the edges of the grill while meats and vegetables
are being grilled, for slow grilling to enhance the smoked flavor.
When the skin begins to break open, it is time to check if they
are done by opening the skin where it is broken with a knife
and fork and tasting.
Remove skin, slice across into three or four pieces and serve. |
