Curried
Lima Beans
Heat oil and
add onion, garlic, tomato, pepper and ginger. Saute at medium
heat for 10 minutes.
Add curry powder, cumin, coriander, turmeric and salt. Stir to
combine. Add water and Lima beans.
Bring to boil and simmer for 15 minutes at medium heat. Garnish
with thyme or cilantro.
Serve with rice or as a side dish.
