 JAMAICAN HOT CROSS BUNS

4 1/2 cups flour
3/4 cups sugar
1/2 cup oil (recommend coconut oil)
2 cups warm milk
2 tsp yeast
1 tablespoon baking powder
1 3/4 tsp salt
1/4 tsp ginger powder
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1/2 tsp cardamon (optional)
1/2 cup raisins (optional)
1 egg

Process:

Combine flour, baking powder, salt, spices and (raisins) in large bowl. You can reduce the sugar slightly if you are adding raisins. Heat the milk until barely warm. Add sugar and oil to the warm milk then sprinkle the yeast over the top. Pour mixture into bowl with flour mixture and stir until well combined. Cover with a towel and let rise for 1 hour. After 1 hour the dough should be puffy. Divide the dough into 18 balls and arrange on a large lightly oiled cookie sheet. Cover and let rise for 1 hour. Use scissors (held vertically) to snip a small X at the top of each bun. Separate the egg and whisk the egg white. Brush egg white mixture over the buns.

Bake buns at 375 degrees in pre-heated oven for 20 minutes or until golden brown.
